The running joke in our house is how stressed I get over cooking. Whereas Scott’s comfortable experimenting with a dish composed of the few ingredients in our fridge (last week’s hard cider turkey legs were a delicious winner), I need to carefully plan everything out.
Unfortunately, after a long day of work and after-work shenanigans, I don’t have the energy to plan a meal. Plus, I’m too hungry to concentrate. The end result: I convince Scott that we need to dine out or pick up food on our way home.
Don’t get my wrong, I love Cleveland restaurants — which makes it that much harder to eat at home sometimes. However, I’m always trying to find a better balance for me (and my wallet) when it comes to dining in versus out. Sometimes that means planning my meals days in advance instead of scrambling the night of.

That’s why I’m excited to give away a pair of tickets to see Rachael Ray in Cleveland. She’ll be in Rocky River on December 14.to sign and discuss her new book Week in a Day.

The thrift-hound that I am, I’m most excited about the section “1 Grocery Bag, 3 Meals,” which shows readers how to fit all the groceries you need for three great meals into – you guessed it – a single bag.
Her book tour stops in Cleveland with an appearance presented by Joseph-Beth Booksellers and The Rocky River Public Library on December 14. The doors of the Rocky River High School Auditorium will open at 6:00 p.m. and the event starts at 7:00 p.m.
Event tickets are free with your purchase of the book from Joseph-Beth Booksellers – see the Facebook event page for more information on how to buy your book, which will be signed by Rachael and available for pick up that night. Plus, Joseph-Beth Booksellers is donating a percentage of all book sales to the Rocky River Public Library.

I love to make sloppy joes! Normally I have all the ingredients already so one of us just has to stop and pick up the buns. I also keep a jar of Mid’s Meat Sauce around in case of emergency hunger – it’s a great sauce when I don’t have time to make my own and it’s a local company.
My favorite dish to make when I’m busy is baked chicken tenderloins. I simply sprinkle a cookie sheet with grapeseed or olive oil then lay the tenderloins down, sprinkle with oregano, cilantro, cumin,and sea salt, and bake at 350 for 30 min. (My oven is kinda strong..) Then just microwave some steamer bag of veggies and we’re good to go!

My favorite dish to make when I’m busy is tacos, because they can be a catch all for leftovers (chicken, beef, different types of cheese, etc). Yummy!

A super quick and easy dish when I’m extremely busy is to get a loaf of garlic bread, spread some premade pesto sauce on it and bake it. Then, layer it with basil, fresh mozzerella and tomato. It’s very quick, yummy and filling!
